Recipe for cooking okra soup:

1.Wash and cut your okra into tiny pieces. Pour into your blender and blend on the grate icon.
Don’t blend on fast speed, so as not to overblend it.

2. Cook on low heat.

3. Normally I would make my soup separate and we’ll seasoned with ground chicken and add seasoning like; oregano, tumeric, ginger, and a bit of salt to taste.

You have a choice to make your own soup whichever way you like.

4. Thereafter I would pour my thick soup into my okra and stir together.

The reason for making my soup separate from my okra is so as not to overcook it.
I still want my okra to be slippery when cooked.

5. Enjoy it.

Recipe for Mashed Potatoes:

Two options

1. Using fresh Irish potatoes

2. Using packaged powdered Irish potatoes. Normally you will find this at Costco or Sams club in the US.

In Nigeria, I think you can find it at Shoprite.

Steps to make your mashed potatoes to look like pounded yam.

A. If using fresh potatoes:
1. Wash peel and cut your potatoes into small sizes and cook until boiled.
2. Drain excess water from the potato.
3. Mash it up on low heat on the stove.
If you like, add a bit of liquid milk but don’t make it too soft. Let it be hard just like pounded yam would.

B. If using powdered packaged powdered potatoes:

1. Boil some water.
2. Open package and pour contents into the pot.
3. Reduce heat and stir with your wooden spoon.
4. Add a bit of liquid milk if you like.
5. Ensure that it is not too soft.
6. Make it as thick as pounded yam.

All set!

Serve and enjoy with your okra soup.
